It's an almost negligible change in time control, while theory and access to information have exploded, even in just the last twenty years.
It seems that we all agree that a delay option would be a nice feature for lichess to add for custom games and tournaments only. Not for the quick match pool (which I think shouldn't have increments, since you're trying to play a game within x minutes). For simuls, I think there could be some interesting ways to use it, such as giving the simul host an increment and keeping others on delay. Similar features may be available, I'm not sure since I am not good enough to host a simul.
